Sharing the same culinary heritage and founding vision as Borsa Restaurant, Rüya İstanbul, which brings Anatolian cuisine to the world with a modern perspective, continues its journey at Çırağan Palace after Cannes, Dubai, and Riyadh, as a shared reflection of a timeless understanding of flavor rooted in tradition. With this collaboration, Borsa Restaurant, in addition to its Kandilli location, offers a special Ramadan menu at Rüya İstanbul, combining its selection prepared specifically for this month with Rüya's contemporary approach to Anatolian cuisine. This special Ramadan gathering, which began for the first time last year at Çırağan Palace, brings together Borsa Restaurant's expertise and Rüya İstanbul's contemporary Anatolian culinary perspective at the same table for the second year. In this special experience, accompanied by the elegance of the palace, the spirit of sharing in Ramadan, the refinement of traditional iftar tables, and the rich flavors of Anatolia come together.
The special Ramadan menu begins with traditional iftar dishes. The starter selection includes Kayseri pastrami, Akçaabat butter, Vakfıkebir pita bread, and various cheeses; followed by olive oil-based dishes prepared with seasonal ingredients, refreshing salads, and the day's hot soup. Hot starters include Borsa's famous water börek (a type of pastry), meat-filled kale rolls, and dairy yogurt. The main courses consist of three carefully prepared delicacies: thinly sliced döner kebab, Borsa-style grilled meatballs, and Konya-style lamb tandoor in a stone oven served with Hünkar Beğendi (a Turkish eggplant dish). Each dish is meticulously prepared according to traditional recipes.
Rüya İstanbul's beloved signature dishes also accompany the Ramadan menu. Two-cheese Black Sea pide fresh from the stone oven, hummus enriched with bone marrow, and Rüya's signature chocolate dessert are among the flavors that complement Borsa's classics. The menu concludes with traditional desserts such as güllaç, baklava, şekerpare, kazandibi, baked rice pudding, cherry bread pudding, Borsa-style date and fig dessert, and fresh profiteroles.
This special Ramadan menu, which blends Borsa Restaurant's long-standing culinary heritage with the contemporary atmosphere of Rüya İstanbul, is preparing to welcome guests overlooking the Bosphorus at tables where the culture of sharing is at the center.
